Actually, I was just saying to a friend that I have to eat lots of salad over the next few weeks as those mangoes are showing up on my waistline!

My latest "thing" is a salad with bits of chicken, egg, tomato, cucumber, etc. and bits of mango all with a balsamic vinegar dressing. Oh yum!! Then there is the sauteed chicken with garlic, onion, hot pepper all cooked together. Then add a package of coconut milk, butter and mango juice for the last few minutes, cook it all together and serve over basmati rice (real low cal, NOT) I substituted conch for the chicken the other night and it was out of this world. And let's not forget the 2 - 3 mangos for breakfast are a great way to start the day!

Of course as mango season is slowing down a bit, pear season is beginning! I guess I better up my exercise . . .

i did a mango creme brulee,with caramelized mangobites in the creme,and caramelized thick and browned mango/limejuice on top...more to come

Thanks rebecca anything with mangoes in it is also good.Mangoes are my favourite fruit and i did get some this year, but not like our mangoes. Pears are on my list also, hard dough bread with pear yum, yum!!!!! Take care Rebecca.
