This morning I found myself looking for Jamaican recipes. They can be found in the usual places on the net, but just for the heck of it I thought I'd look in here to see if anyone had posted any. Nope! Sooo I said to myself, "Self, it sure would be nice to have some local recipes to try out at home and guinea pig on my poor unsuspecting friends in TB to test out my mad cookin' skills."
Right now, I'm sorta hankerin' for some porridge (not oatmeal)

Here's my favorite: Fried Plantain
Take one ripe plantain and peel and slice into 1/8" slices.
Fry in a pan of oil over medium heat, turning every couple minutes.
When a piece has turned a darker color and is soft, remove and place on a paper towel to drain the oil.
Nice and simple and oh so sweet.

Salt fishcakes with sweet potato
200 gr.picked salt fish,2 -3 middle seize sweet potato,peeled and cooked
tabelspoon mashed garlic,1 teaspoon scotch bonnet-finely chopped,2 eggs,some nutmeg,2 tablespoon flour,3 tablespoon scallion-finely chopped,one teaspoon thyme if avail. ,black pepper and salt to taste,ad more scotch bonnet -to taste.(ad a bit more flour if to lliquid)
mix all ingr.together,let sit for an hour and start frying one inch seize cakes in corn oil over med.heat.watch it! the sweet potato burns fast(sugar)
.if the heat is to high.-serve with a pineapple scotch bonnet salsa.one cup fresh finely chopped pineapple,1/2 scotch bonnet finely chopped,1 tablespoon vinegar,2 tablespoon parsley,one tablespoon olive oil,salt and pepper to taste-let marinade one hour

Althought I am from TB, I never had plaintain porridge until I came to the States. It's delicious and healthy. Here we go:
Wash green plaintains thoroughtly, cut up and blend (grate if you prefer), skin and all. Cook by adding water, evap milk, powdered/stick cinnamon, nutmeg, brown/white sugar, condensed milk, dash of salt. Trust me, everyone will want to try it, it's sooooooo delicious.
I'm going to try and pry the reciepe for the peanut porridge from Howie's at Middle Quarters----so good!

Banana Salad
1 dozen green banana
1/2 lb carrot
1 Tin green peas
4 eggs
1/2 c. mayonaise
a pinch of salt
a dash of white pepper
Method: Boil banana, carrot and eggs, put to cool after which you dice banana, carrot and peel and dice egg. Add green peas, mayonaise, salt & pepper. Toss together and put to chill. Serve 12 people.
This recipe comes from Chef Sandra at the Bonnie View Hotel in Port Antonio who gave this to me years ago and I always make it when I'm in TB...

Toney k mentioned peanut porridge. We call know about peanut punch (and the lead in the pencil) but I've never heard of peanut porridge. Anyone with the recipe? Thanks in advance.
