I went for dinner recently at one of the most recognized establishments in TB. I was most disappointed that, after asking for jerk chicken, I was served baked chicken topped with jerk sauce. Unbelievable for a place that is so prominently featured.
I bet it was expensive, too, reltaively speaking?
That is unacceptable.
I swear by the Mom & Pop Jamaican owned places. They serve real Jamaican food at more reasonablr prices.
There is great jerk in Jamaica but many places simply add jerk "sauce" to pre-cooked chicken and call it jerk chicken. When a person has had real jerked chicken, it can be maddening to be served this imitation. The worst "jerk chicken" I've eaten in Jamaica was served to our party last year at a place near the icehouse that I won't name. One of our party was a newcomer to Jamaica and after tasting it, said that he didn't understand what all the fuss was as he thought jerk chicken isn't very good. I told him that wasn't real jerk. For real slow cooked over pimento jerk, I'm partial to On The Border and that place way up on the road to Mandeville whose name escapes me right now. Scotchies near Falmouth was as good as any I've eaten in Boston (where it's almost impossible to find bad jerk). Delroy's jerk chicken is outstanding but without the pimento, to me is closer to BBQ chicken with jerk seasonings. I crave his when I'm away.

Are you willing to say where you had the disappointing jerk in TB? I want to be certain not to order it there though I definitely might order other things on their menu.
I found that the best PR was offering the highest quality available at a fair price with good description.
Jerk was supposed to last the voyage from Oristana or another bay to the destination of the Spanish galleon across the Atlantic. The mainland had precious metals and stones we had precious portable protein. Did they pack bammies too?
I would not consume our jerk after a month in a humid pantry. The old seamen must have had strong stomachs.
Hmmm...Jerked Marinaded Tofu or better...Tempeh with the right sauce.
Anyone know how to make Tempeh?

I know Border & Hilltop. I like the jerk from Iver (? spelling) in South Field. I also used to like Ossie's or Ozzie's in Negril.
Jerk SAUCE? Sounds awful. When I cook jerk back in America I don't have pimento wood but I marinate my chicken for at least 24 hours with real jerk spice and some of my other secret ingredients. I boil the fat off my pork first and then I spice it for 24 hours. People adore both recipes.
I had two incredibly sweet and juicy Julie mangoes for breakfast and Delvin and Kanei's jerk pork and chicken for dinner.
Now that is a culinary delightful day!
And just FYI, they may not use pimento wood but there sure is pimento in the sauce.

God I love Delvin's jerk pork and chicken. I can't believe I screwed up and left on a Saturday before I could get some last time I was there.

Knowing what I now know, I'll definitely ask about food prep before ordering next time.

Pretty easy to figure out which place has an affilate adjacent.

Just to add my two cents.The best jerk pork that I have tasted in all my years is in Junction, St. Elizabeth. If you are ever in the town please go to see Mindy. She is at the rear of the Shell gas station right in the town. She serves the jerked pork with fresh bammy that she wraps in foil and heats on the grill. When we lived in Jamaica the kids knew exactly where dinner was on a Friday night. The meat is seasoned to the bone,succulent and tender. OMG I can taste it now. Yummy!!!!
To Ignorant. He is located at M&D Grocery in Calabash Bay. Right at the entrance to Lyric and just up the road from Sunset Resort. If you ask anyone in TB where Delvin's is, you will get directions.
I miss Delvinīs chicken, oh Kaneiīs pork, you just can not get enough..is cook only on the weekends...for sure has the island taste, they are the best of TB on price also..

My favorite place for Jerk Chicken is Oliver's Dutch Pot, especially when he is the one who is cooking. It is juicy throughout and can enjoy the aroma's of the grilling from the steel drum he uses out front. I wish I knew what place served the awful Jerk and I bet the actual owner would like to know so that they can correct the problem.
The owner knows about the jerk. He either thinks it's not awful or is figuring the people staying near there or there don't know real jerk from roast chicken with jerk sauce.
I would say there are as many jerk recipes as there are jerk pans. Everyone has their own way of doing it. It is up to the consumer to pick and choose what they like best.
Many a time I have gone to a jerk center, seen how they prepare it or what sauce they put on it and I say, "No thank you." and continue on. Not that they are doing it wrong, it's just they aren't preparing it the way I prefer it to be prepared. For me the deal breaker is if the only sauce offered is ketchup. From that I don't care how it is cooked - I will pass. Because my personal opinion is the best part of the jerk is the home made sauce.
For you it may be different, but it doesn't mean I am right and you are wrong, just different tastes.
What I love the best is the fact that no matter how long I live here I will still be able to find different tasting jerk and my quest for the best can continue (with Delvin's remaining #1 at this point in time).

Best jerk chicken always seems to come form someone cooking on the side of the road. I just say 'hold the ketchup' as he wraps it in aluminum foil with a piece of bread.
Good point Lil but I prefer not to say 'cause I have a loved one workiing there and..... .
I think Picky's and Rebecca's suggestions make sense, but ketchup and pickled pepper as told by Old Time Jerk has me scratching my head!
